Easy Quinoa Salad Recipes- Mexican Black Bean Quinoa Salad
Healthy quinoa salad featuring Mexican flavors!
- ½ cup SimplyNature Organic Quinoa
- 1 cup water
- 1 can SimplyNature Organic Black Beans, rinsed and drained
- 1 avocado, diced
- 1 cup heirloom cherry tomatoes, halved
- 2 green onions, sliced
- ½ cup fresh cilantro, chopped
- 2 limes, juiced
- ¼ teaspoon Stonemill salt
- ¼ teaspoon Stonemill pepper
Cook the quinoa in salted water according to package instructions.
Allow quinoa to cool to at least room temperature.
Mix all ingredients together.
Salt and pepper to taste.
