This Black Eyed Pea Salad with Italian Dressing is bright, zesty, and colorful featuring tender black eyed peas, and crisp vegetables and marinated in a homemade Zesty Italian Dressing! This make-ahead side dish is great for potlucks or any occasion. It's also vegan, dairy-free and gluten-free!
In a large mixing bowl, combine the rinsed black eyed peas, green bell pepper, yellow bell pepper, cherry tomato, celery, and red onion.
Mix together your dressing following my instructions for the Zesty Italian Dressing or use store bought.
Pour together the dressing over the black eyed peas mixture and stir until well combined. Garnish with fresh chopped parsley.
Cover and refrigerate for 3-4 hours or up to overnight before serving.
