This Cucumber Watermelon Strawberry Salad is the perfect summer fruit salad.  With diced watermelon, sweet strawberries, and crunchy cucumbers, this unexpected flavorful salad is topped with salty feta cheese or goat cheese, fragrant mint, and bright lime.  Serve it for dinner or as a side dish for any summer BBQ or picnic.

Ingredients
  

  • 2 cups watermelon, cubed
  • 1 cups strawberry, sliced
  • 1 cucumber, sliced
  • lime, juiced
  • cup crumbled goat cheese or feta
  • 2 tablespoons mint, chopped

Instructions
 

  • In a large bowl, toss the watermelon, strawberry, cucumber and lime juice in a bowl.
  • Top with the goat cheese and fresh mint!

Notes

Storage & Leftovers

Store any leftovers in an airtight container in the refrigerator for up to one day.  This is best enjoyed fresh at the same time you make it, and this recipe will not freeze well.
If you make this salad ahead of time, crumble the feta or goat cheese on top just before serving.
