Ingredients
  

  • 1 cup packed basil leaves
  • ¼ cup packed parsley leaves
  • ¼ cup pistachio pieces
  • 1 teaspoon minced garlic, 2 cloves
  • ¼ cup olive oil
  • teaspoon salt
  • teaspoon pepper
  • 2 zucchini, spiralized
  • ½ cup shaved parmesan
  • 1 cup cherry tomatoes, halved
  • Optional Garnish: pistachios and parmesan

Instructions
 

  • Put the basil, parsley, pistachio, garlic, olive oil, salt and pepper in a small food processor or blender. Blend until creamy.
  • Sautee the noodles in a skillet over medium heat for 2 minutes or serve raw.
  • Mix with pistachio pesto, tomatoes and parmesan.
  • Garnish with additional cheese and nuts.
