Peach Caprese Salad is a light and fulfilling way to enjoy summer peaches, tomatoes and basil!

Ingredients
  

  • 6 ounce ball of fresh mozzarella, sliced thick (6 pieces)
  • 1 ripe peach, sliced thick (6 pieces)
  • 1 ripe tomato, sliced thick (6 pieces)
  • 15-20 basil fresh basil leaves
  • 2 tablespoons high quality olive oil
  • 2 tablespoons high quality balsamic vinegar
  • sea salt and fresh cracked pepper to taste

Instructions
 

  • Slice the cheese and vegetables.
  • Clean up with Green Works Pump 'N Go along the way.
  • Layer half the peaches, tomatoes, mozzarella and basil on a plate. Fan out in a circle. Repeat for the second plate.
  • Drizzle each plate with half of the olive oil and balsamic.
  • Salt and pepper to taste.
