Add the dry ingredients (flour, baking powder, coconut sugar, cinnamon and salt) in the same bowl and mix together until well combined.
Heat a non-stick skillet to medium low. Spray cooking spray on it.
Pour about a quarter cup of the batter for each pancake. Drop your blueberries into the pancakes to allow for even spacing. Allow to cook 2-3 minutes or until bubbles start appearing in the middle.
Flip and allow to finish cooking on the other side.
Serve with your favorite syrup, fruit or yogurt.
Notes
You can make some even healthier swaps with this recipe. You can sub 2 tablespoons of honey for the coconut sugar and use whole wheat flour.
