Healthy Greek Yogurt Blueberry Pancakes recipe

Healthier blueberry pancakes!

  • Mix the egg, yogurt, milk and vanilla in bowl.
  • Add the dry ingredients (flour, baking powder, coconut sugar, cinnamon and salt) in the same bowl and mix together until well combined.
  • Heat a non-stick skillet to medium low. Spray cooking spray on it.
  • Pour about a quarter cup of the batter for each pancake. Drop your blueberries into the pancakes to allow for even spacing. Allow to cook 2-3 minutes or until bubbles start appearing in the middle.
  • Flip and allow to finish cooking on the other side.
  • Serve with your favorite syrup, fruit or yogurt.

Notes

You can make some even healthier swaps with this recipe. You can sub 2 tablespoons of honey for the coconut sugar and use whole wheat flour.
