Hi friends! Happy Thursday.
I’ve professed my love of Mexican food here many times. Salsa is basically my best bud and I am always on the look out to make a healthier Mexican meal at home to cut back on the constant burrito cravings
The problem is I could eat this for dinner three nights in a row and STILL want a burrito for lunch the next day. Fajitas, Quesadillas, Burritos… basically all different food groups in my mind.
I’ve even contemplated how an IV of salsa would work.
The struggle is real.
Luckily I have Oven Fajitas. They are one of my favorite ways to get all the flavors of Mexican food mid-week without all the fat. My vegetarian fajitas version is packed with all the good stuff.

You can go as healthy or as unhealthy as you wish with the toppings.
During the week I like to keep my food healthier so I choose whole wheat tortillas, lime, a little cheese, salsa and a smear of Greek yogurt.

To make oven fajitas, I cut up the veggies.

Toss them in my super special vegetarian fajitas blend of spices.

And bake them on a cookie sheet. (And yes, I cover my cookie sheet in foil. Who has time to wash that thing?)

The vegetarian fajitas mixture also reheats well for lunches during the week. Perfect for keeping my burrito brain in check on Moe’s Monday, Taco Tuesday, Burrito Wednesday and Quesadilla Thursday….

I love Mexican food so burritos are delicious but not usually my first choice. I also love taco salads, nachos, fajitas, burrito bowls (more than burritos), and anything I can make Mexican so like a Mexican stuffed sweet potato, or Mexican “Cheese” Fries. I also add salsa to my eggs and breakfasts a lot of times to get my fix.

Yum I could eat salsa everyday for every meal as well. I usually saute my veggies but this looks like an easier way to go.

We actually had fajitas again last night! I love Mexican and can eat it all the time! I do like meat, though, so I’d probably add some chicken or meat to these ones! Look delicious though.

Duuuuudeee. Yes. Mexican is my favorite and it’s SO ridiculously good even without all of the sinful stuff (in my opinion)…and one of the best ways to eat a ton of veggies! I love this idea and I’ve never thought of oven roasting fajita veggies! Genius!
