Well, one of the new recipes I made for the party turned out so well I just had to share it with you guys. Turn your attention front and center to that lovely Grilled Sweet Potato Salad!
My Grilled Sweet Potato & Black Bean Salad recipe is a unique combination of flavors that is sure to impress at your next party. I got everything for this Grilled Sweet Potato Salad (and the entire party!) at ALDI.

For this recipe the SimplyNature Organic Black Beans, sweet potatoes and red peppers play off each other perfectly. When I’m at ALDI I always watch for their own special brands like SimplyNature because I know it will be free of artificial colors, flavors and unnecessary enhancers. I’m also so impressed by the selection of produce they carry. There are always great organic produce options, as well.
To make this Grilled Sweet Potato Salad, you start by grilling big sweet potato slices and red pepper.
You want the sweet potatoes to cook until tender.
The red peppers just need a nice char. It’s better if they are still a little crunchy.
After grilling, chop the sweet potatoes and red peppers into bite sized chunks and toss the veggies with other yummy-ness like black beans, green onions, lime and cilantro. This delightful vegetarian grilling recipe is only 6 ingredients, so it’s perfect if you are in a hurry. It’s vegan, too!
The end result was the star of my cookout menu.
My Grilled Sweet Potato Salad recipe tastes great, but it’s also a healthy choice because of the added SimplyNature Organic Black Beans for protein. The colorful sweet potatoes and other veggies are filling and packed with vitamins.
You could easily make this as a side dish like I did or even a vegetarian or vegan main course during the week. It’s that filling and delicious!
